Antioxidants are substances that can slow or prevent the oxidation process. Antioxidants can also be defined as compounds that protect cells from the harmful effects of free reactive oxygen radicals when it comes in contact with diseases, free radicals can be derived from the metabolism of the body as well as other external factors. Free radicals are unstable species because they possess electrons that are incompatible biologically but search for electron pairs nevertheless in macromolecular biology. Based on the source, the antioxidant is divided into two, they are: natural antioxidants (eg vitamin A, vitamin C, vitamin E, polyphenols, glutathione, ellagic acid, etc.), and Synthetic antioxidants (eg butylhydroxyanisole (BHA), butyl hydroxy toluene (BHT), error propyl, tert-butyl hydroxy quinone (TBHQ), tocopherol, etc.).
